Antica Masseria Caroli Extra Virgin Olive oil

The extra-virgin olive oil “Caroli” is extracted from wholesome olives that are picked at the right degree of their maturation in the olives’ groves of the Apulian zones, where there are the best conditions for the maturation of the most precious olives. Yellow coloured, with green reflections, it wraps up every dish with a strong fragrance of fresh olives. Its fruity taste, with a great intensity, and a softly bitter end, exalts every dish and it suddenly fascinates the palate.
Its qualities makes it irreplaceable for enriching the poor food and for giving prestige and balance of the tastes to the finest dishes.
The company produces various types of extra-virgin olive oil which are different thanks to a careful selection of the different olive cultivars and to the choice of the different processing methods.

The “CLASSIC” extra-virgin olive oil, a typical Apulian product, is characterized by a yellow gold colour, a light fruity and round taste. The “Classic” of the “ANTICA MASSERIA CAROLI” links with every taste and it is suitable for the preparation of raw and cooked dishes.

Extra-virgin olive oil “Monocultivar CERASUOLA” typical of the “Valle d’Itria”
100% ITALIAN PRODUCT

A cultivar that finds its ideal cultivation’s environment in the high hills and even in the lands with a limited water availability. Its entry to the production is medium, the blooming period is intermediate. The productivity is high and alternating. The enclosion is high and the presence of 3-4 drupes for the infiorescence is typical.
The fruits have a little pulp. The output of olive oil is low and it is characteristic for its particular light colour. The separation of the pulp from the olive stone is easy. In our microclimate the ideal picking’s period is from the first/second ten days in November to the first/second ten days in January.

Olives variety: Cerasuola;
Picking: Nibbling by hand or by nets with the shaking machine;
Extraction: at cold with decanter, centrifugal, ecological at two
phases without the water’s contribution;
Acidity: 0.15-0.30 degrees at the bottling;
Colour: light green with golden reflections;
Taste: delicate fruity, round, with a spicy aftertaste;
Scent: persistent fruity of grass with traces of tomatoes;
Density: on average fluid;
Abbinations: cooked and raw vegetables, toasted bread an soups of legumes.

Extra-virgin olive oil “Monocultivar CORATINA” typical of the “Valle d’Itria”
100% ITALIAN PRODUCT

A plant with an easy adjustment to the different olives’environments and very precocious for its entry in the production’s process. The flowers have a low % of miscarried ovaries. The productivity is high and constant.
The drupes come to maturity late and they have variables sizes. In some crops the fruits are also suitable for the preparation of the green pickled olives. The output of olive oil is medium/high; the olive oil has a lot of poliphenols.

Olives variety: Coratina;
Picking: Nibbling by hand or by nets with the shaking machine;
Extraction: at cold with decanter, centrifugal, ecological at
two phases without the water’s contribution;
Acidity: 0.15-0.25 degrees at the bottling;
Colour: leaf’s green with golden reflections;
Taste: Medium strong fruity, with a clean bitterish trace;
Scent: herbaceous of green leaf;
Density: on average fluid;
Abbinations: for the preparation of sauces, abbination
with meat roasts and toasted bread.

Extra-virgin olive oil “Monocultivar LECCINO” typical of the “Valle d’Itria”
100% ITALIAN PRODUCT

A vigorous plant with an easy adjustment to the different olives’environments and a constant and high productivity.
It gets into the production early; the maturation of the fruits is precocious and contemporaneous, with a small resistance to the separation. The contents of olive oil is low.
In our microclimate the ideal picking’s period is from the third ten days in October to the second ten days in December.

Olives variety: Leccino;
Picking: Nibbling by hand or by nets with the shaking machine;
Extraction: at cold with decanter, centrifugal, ecological at
two phases without the water’s contribution;

Acidity: 0.15-0.35 degrees at the bottling;
Colour: green with golden reflections;
Taste: delicate and harmonic fruity, with a vague spice
and traces of delicate artichoke;

Scent: clean of olive with herbaceous traces of hay and flowers;
Density: on average fluid;
Abbinations: cooked and raw vegetables, on fish dishes,
boiled shellfish and rice.

PA rural plant that grows up quickly. Its entry to the production process is medium.
The productivity is medium and alternating.
Its maturation comes late and its resistance to the fruits’ separation is very high.
The output of olive oil is medium/high and its quality is highly regarded.
In our microclimate the ideal picking’s period is from the first ten days in December to the third ten days in January.
