The roast pink of Parma

Ingredients for four people

1.3 -1.4 kg beef cut prepared by the butcher
400 g prosciutto di Parma
300 g Grana Padano

Spread the ham over the meat, put the shaved Grana over the ham, roll up the whole.

I did not add salt because the Parma, per se, is already salty, even the pepper to avoid altering the taste and aroma.

Then you take the wire for a roast, and tie it all up like a sausage. Put the roast in a baking dish and drizzle with extra-virgin olive oil, surrounded by two sprigs of rosemary.



Beef carpaccio with Arugula


Serves four people:
350 g beef into thin slices
2 bunches arugula
100 g parmesan cheese
1 lemon

Chop the leaves of arugula, wash and dry. Cut the cheese in thin slivers. Arrange the meat slices on a platter, season with lemon juice, olive oil and salt, distributed over the arugula and Parmesan cheese and serve.




Serves four people:
400 g sliced beef
4 tablespoons cream
2 tablespoons grated Parmesan cheese
1 pinch nutmeg

Lightly beat the meat, salt it and pass it into the flour, dissolve 50 g of butter, add the slices and cook 4 minutes on each side. Remove and set aside. Dilute the sauce with a tablespoon of hot water, add the cream, cheese and nutmeg. Cook for a few seconds, pour the sauce over the meat and serve
